Course Content

Hospitality and Culinary Arts
Short Description
Suitable for chefs employed full time within a professional kitchen who wish to concentrate on specialist patisserie and confectionery skills and aspire to pursue a career in pastry work. Learn about modern and classical techniques used in the industry.
 
All advanced skills are taught from fermented products to chocolate, marzipan, sugar and pastillage decoration. You will maintain a portfolio of work throughout the programme.
 
*Applicants aged over 19 are not eligible for additional government funding for this course. However you may be able to apply for an Advanced Learning Loan to help fund this course.
 
Advanced Learning Loans: If you are aged 19 or over, from September you may be eligible to apply for a student loan, which is available to support learners undertaking advanced courses like Access to Higher Education. Access Method
You will be advised at interview about additional costs for chef uniform and equipment.
Progression
Employment progression within a variety of kitchen environments across London and the UK or progression to the Level 4 course such as the Foundation Degree.

Entry Requirement
Applicants must be employed in the catering industry and have achieved an ABC/NVQ Level 2 qualification or have relevant experience. A good understanding of English is essential.
