Short Description
This course is designed for people who wish to develop their culinary skills and expertise to reflect contemporary trends and innovative culinary techniques. You will explore potential career opportunities in menu development, product design and gastronomy. The course will provide you with an excellent opportunity to study for a Degree whilst maintaining full-time employment within the hospitality industry, if studying via the day release route.
 
The course combines academic and practical work, with modules including:
• Practical Cooking Techniques in Culinary Arts

• Marketing and Food Product Design
• Gastronomy and Innovation
• Human Resource Management
• Introduction to Culinary Science
• Introduction to Finance and Information Systems

This course is particularly beneficial for those who aspire to progress to specialist senior positions in advanced craft and/or food development. You will also study in the Culinary Science Laboratory at Westminster Kingsway College's Victoria Centre to understand the Science behind Food.

Employability
The course will enable you to develop a wide range of employability skills through the experience you will gain during the course as well as an emphasis on a vocational approach to teaching. There is a well-established network of employers and industry advisors and a visiting speaker / demonstrator programme in place to support course delivery. The course provides an ideal opportunity for students to progress to supervisory and senior management positions in food preparation and catering including leading food manufacturers.
 
Access Method A variety of methods including group and individual projects will be used, and to reflect the vocational nature of the course, assessment, will feature a number of work-based activities based on real-life case studies as well as research from field trips and trade shows. Some elements of the course will consist of on-line assessment although full preparation for this will be provided.
Progression
Successful completion of this course could enable you to progress to the final year of a BA Honours Degree in Culinary Arts and Business Management at Westminster Kingsway College and enhanced career opportunities.

Entry Requirements

Entry Requirement
If you are under 21 at the start of the course you must have:
• At least one GCE A-level pass, or
• Completed an appropriate full Level 3 qualifications, such as Advanced GNVQ/AVCE, NVQ, National Diplomas, Baccalaureate, Irish Leaving Certificate with passes in five subjects at higher level, passes in Open University courses, pass in a recognised Access course, pass in a link Foundation course, Advanced Modern Apprenticeship with Level 3 qualifications.
• Supporting passes at GCSE (including English and Maths at grade C or above) or Key Skills Level 2 qualifications in communication, IT and Application of Number or equivalent.
• IELTS score of 6.0 with no skill below 5.5, or equivalent English qualification  (International students)
 
 
Students over 21 years of age should have:
• Good experience in industry at operative, supervisory or middle management levels
• Good experience in the workplace
• IELTS score of 6.0 with no skill below 5.5, or equivalent English qualification  (International students)
 
Additional entry requirements
For the day release course, applicants should have experience of working as a chef, with a commitment to professional development and improving their knowledge and understanding.
