Westminster Kingsway College students win top prize at The British Turkey Awards 2011

Professional Chef Diploma students, Daniel Lee and Jordan Kerridge beat over 20 finalists to win the accolade of Best Student Chef of the Year at the British Turkey Awards 2011. For the competition the students had to create a starter using turkey leg and/or drumstick and a main course using turkey breast, and both had to be suitable for banquet service.
Daniel Lee won best starter with a menu of Wasabi crusted Croquette Confit of Turkey Leg with a Daikon and Seaweed Salad and Umeboshi Plum Dressing. Jordan Kerridgewon best main dish with a menu of Turkey and Mushroom Pie, Stuffed Turkey Wing Sous Vide, Cleriac Puree, Curly Kale, Glazed Carrots and Turkey Jus.
The students’ prizes included certificates of merit, catering equipment vouchers and the chance to serve their dishes to over 200 professionals from the British turkey industry, including farmers and retailers.
The winners were presented with their trophies by football personality Ray Clemence and Lorna Cousins, chair of the British Turkey Federation’s Marketing Committee, in front of 220 guests at The UnderGlobe, London. Anton Du Beke from BBCshow Strictly Come Dancing hosted the awards.
Norman Fu, Westminster Kingsway College Chef Lecturer, said: “The College is very proud of all the students who took part in this pilot competition. They showed the versatility of turkey and brought new ideas to light. Their dishes were truly inspirational and a great reflection on the teaching at Westminster Kingsway College.”
