Offering two distinctive dining experiences, the best in contemporary cuisine is freshly prepared by our second and third year chef students, under the supervision of experienced chef lecturers, while the front-of-house service is delivered by students and their lecturers.
Eclectic flavours abound in The Brasserie’s elegant surroundings, with starters such as soft-shell crab with mango salsa preceding pan-fried sea bream on crab-and-chilli risotto, or an open lasagne of duck livers and wild mushrooms. With over 100 years of experience, it’s one of the longest-running training restaurants in the United Kingdom.
However, it is chef Auguste Escoffier’s foundations in cookery that the college prides itself on in The Escoffier Room, founded in 2001. This award-winning fine dining training restaurant offers a set tasting menu with a vegetarian option, researched and compiled by the students and staff to celebrate different cuisine styles and festive themes. Creating inspirational dishes using seasonal ingredients is its forte, reflecting current themes and new techniques while respecting the foundations of Escoffier’s philosophy.
