ABOUT THE COURSE

This is a full one day course delivered by our award winning lecturer Jose Souto.

Over the course of the day, you will learn about all of the furred and feathered game indigenous to the UK. There will be a presentation on the quality points and seasons of the game and how it can be utilised effectively within the Hospitality Industry.

The course includes a meal within our award-winning restaurant showcasing the products you will be learning about.

In the afternoon session, there will be a full demonstration about the species of deer found in the UK including a full breakdown of a carcass.
