About the Course

The aim of this programme is to build specialist skills and knowledge in pastry, bakery and confectionery work enabling learners to progress into a career in the Hotel and Catering Industry.

What you will study

This unique 12 week course is suitable for anyone wishing to work in the future in the patisserie and bakery sector.

This course is 80% practical craft based and 20% theory covering working in a professional catering environment, introduction to basic craft fundamentals, food safety and health and safety.

Advice will also be given on seeking employment in one of London's many pastry kitchens to aid you to develop a future career and explore opportunities in the field of patisserie and confectionery.

Access Method

Continual assesment throughout the programme of study.

Progression

Progress to Level 3 courses in Patisserie and Confectionery and develop your career.

Entry Requirement

All applicants for this course should apply to become a member of the Craft Guild of Chefs to enrol. £100 payable to the Craft Guild of Chefs for programme membership, master classes, judging and the Stockpot magazine.

You will be advised at interview about additional costs for chef uniform and equipment.
