About the Course
This course is for chefs working in this field who wish to develop and expand their skills and knowledge to an advanced Level.
You will study the Level 3 qualification in the first term followed by the College Culinary Award over the rest of the course.
What you will study
You will expand your culinary creativity and resource management strategies to meet the needs of all sectors of the industry.
You will study specialist units including preparation and cooking of complex fish and shellfish dishes, meat, poultry and game dishes, soups, hot sauces and pasta dishes, vegetable dishes and classical garnishes.
Continual assesment throughout the programme of study.
Successful completion of this course could enable you to progress within a variety of kitchen environments or to a Level 4 course such as the Foundation Degree in Culinary Arts.
You must be employed in the catering industry in a suitable establishment in a supervisory position, ideally demi Chef de Partie or above and have achieved a Level 2 qualification or have relevant industry experience.
Potential candidates will be invited for an interview and written test. A good understanding of English is essential.
All applicants for this course should apply to become a member of the Craft Guild of Chefs to enrol. A fee is payable to the Craft Guild of Chefs for programme membership, master classes, judging and the Craft Guild's Stockpot Magazine subscription.
